Chocolate Chip Banana Bread

Here's a little happiness boost for your Sunday because why not put a smiley face of chocolate chips on your banana bread? As I mentioned in my write up for Zucchini Banana Bread, my older brother specifically asked for plain chocolate chip banana bread, without the zucchini, so here it is! This recipe was super simple, very easy, and a huge hit. It disappeared within hours, and I may or may not have eaten about half...

The most important thing about this recipe, in my opinion, is watching it carefully as it is in the oven. Our oven likes to crisp the outside crust super quickly, but not quite cook all the way through to the middle of the loaf. What I like to do is to put a layer of aluminum foil on top of the loaf halfway through the baking time. That way, the inside of the loaf cooks through, but the outside stays a nice golden brown.

I have been trying out a lot of recipes like loaves, pies and cheesecakes rather than main meals lately because with school, it has gotten super tricky to fit everything in on a week night. Hopefully in the coming weeks and once we get into the holiday break, I will have time to make some fun meals!

Ingredients ~

2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon salt

3 ripe bananas, mashed

1 tablespoon milk

1 teaspoon ground cinnamon, or to taste

½ cup butter, softened

1 cup white sugar

2 eggs

1 cup semisweet chocolate chips

Directions ~

  1. Preheat oven to 325 degrees F (165 degrees C). Grease a 9x5-inch loaf pan, preferably glass.

  2. Mix flour, baking powder, baking soda, and salt in a bowl. Stir bananas, milk, and cinnamon in another bowl. Beat butter and sugar in a third bowl until light and fluffy. Add eggs to butter mixture, one at a time, beating well after each addition. Stir banana mixture into butter mixture. Stir in dry mixture until blended. Fold in chocolate chips until just combined. Pour batter into prepared loaf pan.

  3. Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 70 minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack before slicing.
