Graduation Cupcakes!

It has taken me a second to getting around to write this blog, my brother and his class graduated weeks ago, but I still wanted to share it! I played around with frosting decorations and also made little graduation caps out of edible paper. It all felt very festive, and was more for myself to have fun with it than anything else. I think if I did anything differently, it would be baking the vanilla cupcakes for a bit longer. I took them out to early, so they were a bit denser than I had hoped for. The frosting on the other hand was so dangerously delicious, I had to control my temptation so I didn't eat it all! I ended up having more than enough to frost all of the cupcakes.

Vanilla cupcakes:


Ingredients ~

1 1/2 cups all-purpose flour

1 1/2 teaspoons baking powder 

1/4 teaspoon fine salt 

2 large eggs, at room temperature 

2/3 cup sugar 

1 1/2 sticks (12 tablespoons) unsalted butter, melted 

2 teaspoons pure vanilla extract 

1/2 cup milk 


Instructions ~

  1. Preheat the oven to 350 degrees F and position a rack in the middle of the oven. Line one 12-cup standard muffin tin or two 24-cup mini-muffin tins with cupcake liners.

  2. Whisk the flour, baking powder and salt together in a medium bowl.

  3. In another medium bowl, beat the eggs and sugar with an electric mixer until light and foamy, about 2 minutes. While beating, gradually pour in the melted butter and then the vanilla.

  4. While mixing slowly, add half of the flour mixture. Then add all the milk, followed by the remaining flour mixture; take care not to overmix the batter. Divide the batter evenly in the prepared muffin tin.

  5. Bake until a cake tester inserted into the center of the cupcakes comes out clean, rotating the tin about halfway through baking time, 18 to 20 minutes for standard cupcakes or 10 to 12 minutes for minis. Cool the cupcakes in the tin on a rack for 10 minutes, then remove from the tin and cool on the rack completely. Frost and decorate as desired.

Chocolate Frosting:


Ingredients ~

1/2 cup (1 stick) butter or margarine

2/3 cup HERSHEY'S Cocoa

3 cups powdered sugar

1/3 cup milk

1 teaspoon vanilla extract


Instructions ~

  1. Melt butter. Stir in cocoa. Alternately add powdered sugar and milk, beating to spreading consistency.

  2. Add small amount additional milk, if needed. Stir in vanilla. About 2 cups frosting.
