Pretzel Heaven

When I am stuck at home without much to do, I frequently find my self staring into our food cabinet; I subconsciously walk up and swing the doors right open. Instead of falling into this mindless eating trap, why not do something worthwhile and fun? Why eat out of boredom when you can create a delicious snack. Not only does baking cure boredom and hunger, but the kitchen smells amazing, you have been productive, and you now know how to make a whole new treat!


ingredients ~

vegetable oil/cooking spray

3 1/4 cups salted miniature twist pretzels

1/2 cup all-purpose flour

1/2 tsp. baking powder

1 stick unsalted butter, room temperature

1/2 cup sugar

1 large egg yolk

 

recipe ~

1. Preheat oven to 325.

2. Coat a pan with cooking spray and line the bottom with parchment.

3. Pulse 1 3/4 pretzels in a food processor until powdery (or finely chopped), enough to fill 1/2 cup and discard the rest.

4. Combine flour, baking powder and powdered pretzel in a medium bowl.

5. Use the remaining 1 1/2 pretzels and chop up into larger pieces.

6. Combine butter and sugar and beat with a mixer or by hand for about 5 minutes until pale and fluffy.

7. Reduce speed and beat in egg yolk, then the pretzel-flour mixture, then add chopped pretzels, leaving 1/4 cup out.

8. Press dough evenly into the pan, it is okay if it doesn't fill the whole thing.

9. Top the dough with remaining chopped pretzels.

10. Bake the the bar until pale brown and firm in the center, 20-25 minutes.
