Buffalo Chicken Pizza

It's finally Friday, which means, Friday night pizza night here we come! Buffalo Chicken pizza is my brother's favorite, so I decided to give it a go. My dad got a new big green egg for father's day, so we took it to the next level and cooked it on that! This pizza was a few tries in, so we managed to not burn the bottom. If I made one change, I would have rolled the dough thinner so that it was not so dense, but other than that this pizza was so fun and so delicious! It does kind of taste more like barbecued chicken on top of pizza, but I think that either way, it was a hit.

Ingredients ~

1 homemade or store bought pizza dough

4 ounces cream cheese

1 teaspoon Ranch dressing seasoning, the powder

1 cup chopped cooked chicken

1/2 cup Frank’s Red Hot Sauce

8 ounces mozzarella, grated

Ranch dressing prepared for serving, if desired

 

Instructions ~

1. To make the dough, place the warm water and sugar in the bowl of a stand mixer. Sprinkle the yeast on top and let bloom, about 10 minutes.

2. Add the flour, olive oil, and salt to the yeast mixture and turn the mixer (fitted with the dough hook) to medium. Knead until the dough comes together to form a smooth dough. Remove dough to an oiled bowl and place in the oven with the light turned on.

3. Let rise for one hour, or until doubled in bulk.

4. When the dough has doubled, punch it down.

5. Preheat the oven to 500 degrees.

6. Roll the dough out on a well floured surface to a 12 inch circle and place on a pizza stone or pan.

7. To prepare the pizza, in a small saucepan over low heat, melt the cream cheese, stirring constantly to prevent it from burning on the bottom of the pan.

8. Once the cream cheese has melted, spread it evenly over the pizza crust and sprinkle with the ranch seasoning powder.

9. Sprinkle all but 1/4 cup of the cheese over the crust.

10. Toss the chicken with the hot sauce to coat and put the chunks of chicken evenly over the cheese.

11. Top with the remaining cheese.

12. Bake for 10 minutes or until the dough is golden and the cheese has melted.

13. Drizzle ranch dressing over the pizza before serving, if desired.
