Avocado Toast

There are so many different ways to make every type of food so why not spice it up? This breakfast allowed me to start my day energized and happy. The key is a ripe avocado - without the right avocado, this recipe is toast (no pun intended)!

ingredients ~

2 pieces of bread

1 ripe avocado

Extra Virgin Olive Oil

Basil Pesto Aioli

1 large egg

1/4 cup shredded cheddar cheese

Dash of salt

 

recipe ~

1. Pop the toast in a toaster oven for a couple minutes, until lightly toasted.

2. While toasting, cut avocado into slices and divide evenly.

3. Crack egg into small bowl, then add in cheese and whisk; briefly set aside. Lightly grease skillet with olive oil and scramble egg on medium heat.

4. Spread basil aioli on one piece of toast, add slices of avocado and sprinkle with salt.

5. Spread avocado slices on the other piece of bread, drizzle with olive oil and sprinkle with salt.

6. Add eggs to the plate and enjoy!
