Cheese Galore

Good morning! Time for this delicious omelette to melt in your mouth to start the day the right way! This omelette not only has protein and nutrients from 3 eggs, but also has veggies and cheese to make it a well rounded meal!

Omelettes are made in millions of homes worldwide every morning, in ways that I can only imagine, so this is not a strict recipe. Omelettes can come with any variation of vegetables, cheeses and meats!

 

ingredients ~

vegetable oil

1 Tbsp. butter

3 eggs

1 cup cheese, split

Half a dozen cherry tomatoes

1/4 cup green peppers

2 Tbsp. red onion

 

recipe ~

1. Crack eggs into small bowl and stir in 1/2 cup cheese; set aside.

2. Slice tomatoes in half and place in toaster oven or in the oven to roast. Take out after 5 minutes or when slightly shriveled.

3. In a medium skillet, melt butter on medium heat and add chopped red onions, sauté until soft. Add in chopped green peppers and sauté for 2 minutes or so.

4. Remove peppers and onions from skillet and grease skillet lightly with vegetable oil; pour in egg and cheese mixture and cook on medium-low until there is a firm bottom.

5. Pour in peppers, onions and tomatoes and top with remaining cheese.

6. Cook until eggs are cooked through, about 10 minutes (on low heat to not burn the bottom but thoroughly cook eggs).

7. Flip the half with the veggies onto the other half and serve!
