Cod Fish Tacos

It's Taco Tuesday! I am 100% making these fish tacos again! We are pretty good about getting taco night in every week, even if it is not on Tuesday, but we don't spice the tacos up as much as we could. These fish tacos were a perfect variation on our regular taco tradition.

ingredients ~

marinade:

1/2 cup extra-virgin olive oil

juice of 3 limes (3 to 4 tablespoons)

2 teaspoons salt

1 teaspoon cumin seeds

1 teaspoon oregano


1 1/2 pounds cod fillets

Grape Seed oil (or olive oil)

ten 6-inch flour tortillas

guacamole (2 avocados smashed with 1/2 lime squeezed and salt)

sour cream

tomato salsa (or 2 medium tomatoes, diced)

lime wedges (optional)

cheese (optional)


instructions ~

1. In a small bowl, combine the oil, lime juice, salt, cumin and oregano.

2. Lay the fish fillets in a shallow glass, ceramic, or other nonreactive dish. Spoon the marinade over the fish to coat it completely. Set aside at room temperature to marinate for 15-30 minutes.

3. Cover the bottom of a saucepan lightly with Grape Seed oil. Sauté fish fillets, 6-8 minutes on each side or until cooked through and the flesh is opaque. Set the fish aside on a plate and warm tortillas in the oven.

4. Prepare and set out the guacamole, tomato salsa and sour cream to serve with the fish.
