Ham and Cheese Quiche

Ham, cheese, eggs, onions, more cheese... what better way is there to start off the day? This quiche was gone within hours - my family couldn't get enough. It required getting up a little bit earlier, but it was worth it. I used a store bought pie crust because I didn't have the time to make one, but if you want to make one - go for it! I never really know when a quiche is ready to come out of the oven, so my recommendation is to keep close and check it often after it has been cooking for half an hour.


ingredients ~

1 (9-inch) frozen ready-to-bake pie crust

1 Tbsp. butter

1/2 medium yellow onion, diced

1 tsp. garlic, minced

4 large eggs

1 cup half-and-half

1/2 tsp. Italian seasoning

Salt and pepper, to taste

1 1/2 cups diced/cubed cooked ham

1 cup Swiss cheese, freshly grated

1 cup cheddar cheese, freshly grated

Optional garnish: chopped chives, cooked and chopped bacon

1. Preheat oven to 375 degrees F. Place unwrapped frozen pie crust on a baking sheet and bake for 1 minutes. Remove and allow to cool slightly.

2. Add the butter to a nonstick pan and melt over medium-high heat. Add in the diced onion and cook 3-5 minutes or until soft and translucent. Add in the garlic and stir until fragrant, about 30 seconds. Remove, set aside, and allow to cool slightly.

3. In a large bowl, whisk the eggs until lightly beaten. Then whisk in the half-and-half, Italian seasoning, and salt and pepper to taste.

4. Gently stir in the cubed ham and both cheeses. Stir in the cooked onion and garlic.

5. Pour filling into the pre-baked pie crust (in the pie pan) and bake on the lower oven rack for 35 to 43 minutes, or until set and very slightly jiggly in the center.

6. Serve warm with optional garnished as desired.

total time: 55 mins
