Do not let the "black bean" part of this burger turn you away before you have had a bite! This vegetarian alternative to a regular burger is so tasty and while it doesn't taste like a normal burger, it has its own delicious and rich flavor. The many ingredients that go into this burger perfectly compliment the black beans, which make up most of what you taste. These burgers can be served with cheese, lettuce, tomato, avocado and so much more, but honestly, I think they are better without too many toppings. I topped mine with a few slivers of avocado and loved it.
I made a couple adjustments to the recipe, but nothing major. We didn't have Panko breadcrumbs, so I crushed up several Ritz crackers and it did the trick! I also substituted orange pepper in place of red and green for convenience. I am also guilty of speeding up the process, but I don't think the burgers suffered from that. I probably kept the black beans in the oven at the beginning for only 5-10 minutes, and only let the patties cool and form in the fridge for 5-10 minutes. If I weren't in a time crunch, I would have been more patient, but I was optimistic that it wouldn't change the taste of the burgers, and I think I was right. I highly recommend, especially for anyone trying to go vegetarian. These burgers are high in protein and other nutrients, despite the lack of meat.
Ingredients ~
2 Cans Beans 14 oz., black, drained, rinsed and patted dry
1 Tablespoon Olive Oil
1/4 Bell Pepper green, minced
1/4 Bell Pepper Red, minced
3/4 Cup Yellow Onion, chopped
2 Cloves Garlic, minced
1 3/4 teaspoons ground Cumin
1/2 teaspoon smoked Paprika
1 teaspoon chili powder
1/2 Cup Panko Bread crumbs
2 Eggs large, whisked
1 Tablespoon Worcestershire Sauce
Salt and Pepper to taste
Toppings:
BBQ Sauce
Mayo
Caramelized Red onions
Avocado
Butterleaf Lettuce
Cheddar Cheese
Buns Buttered and grilled brioche
Instructions ~
Preheat oven to 325°F. Spread beans evenly onto a lined baking sheet and bake for 15 minutes until slightly dried out.
Meanwhile, add olive oil, chopped pepper, onion, and garlic over medium heat until peppers and onions are soft, about 5-6 minutes.
Place on a paper towel lined plate and dry gently.
Place in a large bowl or in a food processor with the remaining ingredients. Stir or pulse everything together, then add the black beans. Mash with a fork (or pulse) the mixture, leaving some beans whole and intact for texture.
Use a 1/3-1/2 cup to scoop into patties
Form and set in the fridge to rest for 15 minutes.
Place patties on a parchment paper lined baking sheet and bake at 375°F for 10 minutes on each side, 20 minutes total.
To Grill ~
Place patties on greased aluminum foil and grill at medium heat for 8 minutes on each side, being gently as you turn the. place cheese on the last few minutes to melt slightly.
