Oven-Baked Egg Bites

Have you ever been to Starbucks and ordered the egg bites? My mom and I love them so much, and every time we go, we have to have them. So, we thought to ourselves, why not try and make them at home? Of course, we were not the first people to think that, which worked in our favor because this recipe was just a quick internet search away. While these egg bites came out quite differently than the ones at Starbucks, they were still the perfect healthy snack.

The possibilities are endless with these egg bites because you can pick and choose whatever ingredients you want, and use whatever ingredients are convenient to you. I did not have any pepper at my house, so I substituted tomato, sautéed it quickly then added it right in. I loved how these came out because they were so light and fluffy but also packed with nutrients and ingredients that make my body happy.

Only myself, my mom and my dad were interested in helping ourselves to some of these for breakfast, so we sealed them in the fridge, and they lasted for a few days! If you don't think you would eat all 12 within a couple days, just cut the ingredients in half, or even by 4, and it will work the same! The recipe calls for a silicone egg tray, but I just used a muffin tin and it did the trick - the only difference being the shape. Just make sure to spray with non-stick to make your life easier on the back end!

Ingredients ~

Bacon and Gruyere 1 tbsp olive oil (to grease egg tray)

16 eggs, whisked

1 cup bacon or turkey bacon, cooked and chopped

1 cup gruyere cheese or aged cheddar, shredded Egg White and Red Pepper**

1 tbsp olive oil (to grease egg tray)

4 cups egg whites

1 cup roasted red peppers, diced

1 cup spinach, finely chopped

1 cup Monterey jack cheese, shredded


Instructions ~

Note: Pick one version for this recipe; if you wish to do both versions (like in the video), cut each of the ingredients in half

  1. Preheat oven to 325 F.

  2. Fill a 9x11 baking dish halfway with warm water, then place a greased 12-count silicone egg tray overtop.

  3. Divide toppings of choice and cheese among egg cups, then fill the rest of the way full with eggs or egg whites. Bake in the oven for 60 minutes or until eggs are set.

  4. Remove egg bites from molds once cool and serve and enjoy!

*the recipe calls for 60 minutes in the oven, but our oven heats quickly, so I ended up only baking them for 25 minutes.

**I changed the ingredients up a bit and kept the cheese and spinach but switched to whole eggs and sautéed tomatoes.
