Panko Crusted Mashed Potato Cakes

Don't know what to do with leftover mashed potatoes? We had a bunch left over from last night's dinner, and they were just sitting in our fridge. These cakes were the perfect way to bring the delicious mash back to life!


Ingredients ~

2 cups chilled mashed potatoes

2 eggs, slightly beaten, (separate bowls)

2 Tbsp. onion, chopped

1/2 Tbsp. black pepper

1/2 cup flour for dredging

1 cup Kikkoman Panko Bread Crumbs

3 Tbsp. vegetable oil for pan frying


Instructions ~

1. In a medium bowl, combine potatoes, one egg, onion and black pepper.

2. Divide potato mixture into 8 equal portions, and use your hands to form 1/2-inch thick patties.

3. Dredge patties in flour, then in egg and coat with Panko Bread Crumbs.

4. Meanwhile, heat vegetable oil in a large skilled over medium-high heat. Add potato patties to the hot oil. Cook until well browned, turn with a spatula and brown on the other side.
