Vegetarian Fajitas

I love the burst of color that peppers add to everything, and I also love how delicious they are in fajitas! One of the things that Climate Activists are pushing for are the little adjustments that people can make in their daily lives that together, can make an impact. One of those things is choosing not to eat meat every day. This vegetarian fajita recipe is so yummy and it doesn't involve any meat!


ingredients ~

extra virgin olive oil

1 whole red pepper, sliced

1 whole orange pepper, sliced

1 medium onion, sliced

1 pkg. mushrooms (could sub w/ 1 lb chicken for meat version)

1/4 cup water

 

instructions ~

1. Sauté peppers and onions with olive oil in a skillet on medium heat (or wok). When soft, add in mushrooms and continue to sauté.

2. Reduce to simmer; add in water and fajita mix and stir.

 

To complete the fajita meal:


Serve with:

1/2 head lettuce, chopped

1 tomato, chopped

1/2 cup cheddar cheese, shredded


**distributed evenly into corn tortillas
