Caprese Pizza

Friday night pizza night tonight! It has been so much fun experimenting with my dad on the Big Green Egg. We have made a bunch of different recipes, and my favorite, by far, is making pizzas. We have made plain cheese, Buffalo Chicken, mushroom and avocado, and more! This Caprese Pizza was to die for; everyone ate it up so fast. The basil is right from our garden, and next week, we will be able to make it with tomatoes from our garden as well. This time around, I divided the pizza dough in half so that it wouldn't be so thick, so it would cook evenly with the toppings. It turned out really well, with just the right amount of crispiness. If I had one suggestion, it is to put the basil on two minutes before you take it off the heat so that it keeps some of its shape and freshness.

Ingredients ~

1/2 portion pizza dough

olive oil

3 medium tomatoes

1/2 8 0.z. ball mozzarella cheese

12 fresh basil leaves


Instructions ~

  1. Heat grill to about 600 degrees F.

  2. Roll out the dough on a floured surface, until fairly thin and in a circle.

  3. Drizzle olive oil and spread around dough. Break off chunks of mozzarella and spread around dough. Slice tomatoes and spread evenly around cheese.

  4. Cook for 6-8 minutes or until cooked through. Remember to top with basil.

  5. Enjoy!

+ to cook in an oven, preheat to 450 degrees F, and cook for 10-12 minutes
