Quinoa Bowl

I love to make quinoa bowls by using a base of quinoa, and experimenting with all kinds of toppings. One of my go to toppings is feta cheese and my favorite dressing is Annie's Asian Sesame. In this recipe, I added sautéed mushrooms, caramelized almonds and black beans to give it some sweetness but also protein.

ingredients ~

1/8 cup slivered almonds

2 Tbsp. brown sugar

2 cremini mushrooms, sliced

1 Tbsp. butter

1/2 cup cooked tri-color quinoa

1/8 cup black beans, rinsed

 

recipe ~

1. In a small saucepan, on medium heat, combine slivered almonds and sugar and stir until caramelized; set aside.

2. In a small saucepan, on medium heat, melt butter, and add mushrooms; sauté.

3. In a bowl, add quinoa, and top with almonds, mushrooms and beans.
